A typical day of what I eat as a vegan mum.

Morning is all about smoothies, quick, easy and super healthy! The amount of time I spend eating food later in the day means I don’t really like to spend to much time on breakfast.

I have recently upgrade my morning smoothie to include spiralina. I used to have it, and stopped when I was pregnant as it made me not feel well.

Smoothie:

  • 1.5 banana
  • 1/2 cup oats
  • 1/2 cup dates
  • 1t turmeric
  • 1t cinnamon
  • 1t spiralina
  • Pinch of pepper
  • 1t coconut oil
  • 2 cups water

Lunch time has been inspired by being raw till 4, which has been making us feel so much better, no grogginess after our usual lunch.

We eat a massive salad and then a fruit salad. This is where I add nuts and seeds.
  

 

Dinner time is usually a bunch of roast vegetables, roast potatoes and Krispy kale.

In between meals I will usually snack on fruit, like bananas, oranges, plums, etc.
